Chocolate Cinnamon Muffins

A friend gave me a cook book called 1 Mix, 100 Muffins. There is one basic recipe and you can make 100 different muffins. I made the Chocolate Cinnamon Muffins tonight. They smell so good.  I plan to take them to a friend who just came home from the hospital with her baby. The recipe is below if you would like to try them. Or maybe you would like to buy the book. Chocolate Cinnamon Muffins
   makes 12

heaping 1 1/2 cups flour
1/2 cup unsweetened cocoa
1 tbsp. baking powder
1/2 tsp. ground cinnamon
1/8 tsp salt
heaping 1/2 cup firmly packed light brown sugar
1 cup semisweet chocolate chips
2 large eggs
1 cup milk
6 tbsp. sunflower oil or melted, cooled butter


1. Preheat oven to 400 degrees.  Grease a 12-cup muffin pan or line with 12 muffin paper liners.  Sift together the flour, cocoa, baking powder, cinnamon, and salt into a large bowl.  Stir in the sugar and chocolate chips.

2. Lightly beat the eggs in a large pitcher or bowl, then beat in the milk and oil.  Make a well in the center of the dry ingredients and pour in the liquid ingredients.  Stir gently until just combined; do not overmix.

3. Spoon the batter into the prepared muffin pan.  Bake for 20 minutes, until well risen and firm to the touch.

4. Let the muffins cool in the pan for 5 minutes, then serve warm or transfer to a wire rack and let cool completely.
