This is a favorite muffin recipe of mine. They don't last long at our house because they are so good. I love them warm with a little butter and a cup of hot tea!
Banana Nut Muffins
2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup mashed ripe banana
1/2 cup vegetable oil
2 large eggs
2 tablespoons milk
1 cup chopped pecans
Garnish: confectioners' sugar, fresh raspberries
Preheat oven to 400 degrees. Bake 12-15 minutes (I recommend checking at 12 minutes)
Grease muffin pans (makes 15 muffins).
In large bowl, combine flour, sugar, baking soda, baking powder, cinnamon and salt.
In medium bowl, combine banana, oil, eggs, and milk; add to flour mixture, stirring until just combined. Stir in pecans. Spoon batter into prepared muffin cups.
Cool-garnish with confectioner sugar and raspberries

You have a beautiful family and I see that we share a love for Kari Jobe's music and the way Kay Arthur teaches the Bible. I feel like I know you a little bit better already! And these muffins look amazing... I don't think they would last very long around my house either!
